His fondest culinary memories lie not within multi-starred restaurants and grand hotels, but at his Grandmother's Sunday table, and within his Grandfather's vegetable garden. His Father's love and admiration for roadside farm shops, and his Mother's simple home cooking & baking have laid path for his honest, rustic cooking. He has written six cookbooks, PaulFood being published in English by Grub Street in 2011.

Speaking about the Festival he says, "I have travelled extensively, cooking & guest-chef'ing from Sydney, Toronto to Tokyo, Mexico City to Provence, Miami & Hong Kong. I have never been to India, Goa has remained only a dream. I look very much forward to visiting this beautiful land."
